I’m really into salads lately, especially if they include feta cheese, strawberries or pears, and something crunchy like nuts, or my new favorite topping – granola!
Here’s my newest creation. I baked salmon in a little lemon juice, fresh dill, sea salt, and black pepper. My salad was a simple mixture of rocket and romaine lettuces, strawberries (that are more the size of raspberries here) feta cheese, and toasted almonds coated in a little cinnamon and brown sugar. My dressing was simply a few splashes of balsamic vinegar because there is already a lot of flavor in this salad. It was so yummy!
